December’s trip takes us back to the Valpolicella area, specifically the municipality of San Pietro in Cariano. There we will tour Zymè and their impressive cantina. The Zymè winery is very unique in its structure – not only for the architecture but this is where traditional meets modern. The name Zymè is Greek for yeast, a vital element in the world of wine making. The company logo represents a pentagon overlaid on a grape leaf and represents the five main elements for wine production: man-vine- land-sun- water. We will also have an opportunity to purchase the famous Kairos panettone.
Our tour finishes with a tasting of a selection of their wines – one white and seven reds! Our day will end with lunch at Trattoria Caprini, high on a hill overlooking the Negrar Valley.
